2016 Sauvignon Blanc


Very light pale straw in color. The aromas start off with tropical and grassy characteristics. Secondary aromas are lemon and pineapple.  The completely natural high acidity is backed the wine hits you with high acidity and flavors of lemon and a touch of grassiness.  The acidity stays with you all the way through and the wine finishes with melon and grapefruit.

Production
These perfect and pristine SB clusters were night-harvested and delivered to the winery early morning. The cool temperatures of the fruit are ideal for controlling juice temperature in the winery before and during primary fermentation. The grapes whole-cluster pressed (no crusher) and the juice chilled down even further. They then fermented cool and slow in stainless steel fermenters. After a short aging period on the lees, it was racked and chilled down low again for 6 weeks to keep fresh and prepare for bottling.
