Golden straw in color, the aromas start off with pear and rich red apple characteristics. Secondary aromas are creamy vanilla and nutmeg. The acidity is well balanced in this medium-bodied wine and it is backed with flavors of rich pears. The acidity stays with you through the finish with lingering pears and long vanilla tones.

These perfect and pristine Chardonnay grapes were night-harvested and delivered to the winery early morning. The cool temperatures of the fruit are ideal for controlling juice temperature in the winery before and during primary fermentation. The grapes were crushed directly into the press and pressed off skins. The juice was then put into new and used American oak barrels for barrel fermentation. After fermentation the barrels were topped up and the lees were stirred every other week for the following four months. After a short additional aging period, it was racked off lees and chilled down low again for 6 weeks to prepare for bottling.
