2015 Cabernet Sauvignon


Garnet to ruby red in color, the aromas start off with cherries and dried herb characteristics. Secondary aromas are nutmeg, cinnamon and currants.  This is a well-balanced and medium-bodied Cab and it is buoyed with flavors of currants, cherries and spices. The tannins are softening and this wine stays with you through the finish with lingering cherry and nutmeg tones.

Aging/Cooperage – Cellared 17 months in 10% new American oak

Production
These Cabernet Sauvignon grapes were picked on a mid September morning, the cool grapes delivered to the winery before mid day. The cool temperatures of the fruit allowed us to cold soak the must on the skins in the winery for a few days before beginning primary fermentation. The grapes were left with approximately 15% uncrushed in order to assist with retaining bright fruit characters. Towards the end of fermentation the fruit was pressed from skins and sent to barrels for secondary fermentation followed by 17 months of aging. After a few rackings it was pulled from barrels and blended with a small amount of Merlot before bottling.
